Baronìa is produced exclusively with Italian durum wheat.
Ours is the product of a supply chain project involving hundreds of farmers that believe, just like we do, in the valorisation of Italian agricultural products.
It’s in our Mill that wheat is transformed in semolina.
Here are a few recipes by great chefs that interpret the unique taste of Pasta Baronia every day; using know-how and creativity.
The pasta is an extraordinarily simple element, made only with semolina and water, with no preservatives or additives whatsoever: only pure nature.
This is why the quality of Pasta Baronìa is a direct consequence of an accurate selection of the best Italian durum wheat and continuous control of the water used in the production of the pasta, drawn from the uncontaminated springs of Irpinia.
Immediately after the milling in our Mill, the semolina is automatically sent to the annexed Pasta Factory, where the mix is created that gives its unique characteristics to the pasta. It’s during this phase of production that the master Baronìa Pasta makers carry out accurate controls on each step, so to assure quality and to preserve the organoleptic characteristics of the final product.
How is it possible to assure absolute quality of our pasta? It’s made possible by milling the durum wheat directly in our own Mill. This is what we and only few other Italian pasta factories (less than 10%) have always done through the years.
In the Baronìa Mill we respect the specific characteristics of wheat, thus assuring purity of the semolina and preservation of all of the nutritious elements.
To obtain high quality standards and thus healthy and safe products, we have implemented a computer-controlled integrated production process that goes from the Mill to the Pasta Factory, which allows us to guarantee a total traceability of our products.
To go back from the pack of pasta to the lot of wheat milled is of enormous value for our customers.
Only full control allows high quality!
The entire production process is continuously verified, from the selection of the wheat to the finished product, to the final cooking and taste test. Our production process is subjected to the HACCP control system and is guaranteed not only by the UNI EN ISO 9001 and 14001, regarding Quality and Environment, but also by BRC, IFS and BioAgriCent certification concerning biological products. The Pastificio Baronìa is one of the first pasta factories to obtain certification of its Management and Social Responsibility System, in compliance with SA8000 Standards.
